- 750 ml agua
- 80 g hueso de pollo
- 80 g hueso de cerdo
- 15 g jengibre
- 40 g cebolla cambray
- 15 g ajo
- 40 g zanahoria
- 2 g alga nori
- Para el tare
- 100 ml Salsa de soya
- 2 g alga nori
- 50 ml Sake

- Mezclar el sake, el alga nori y la salsa de soya en un recipiente y dejar reposar por un mínimo de una hora.



- Cortar los vegetales previamente lavados y desinfectados (cebolla cambray, ajo, zanahoria y jengibre).

- Pasar los vegetales cebolla cambray, ajo, zanahoria y jengibre) a una olla alta junto con los huesos y el alga nori, cubrir con suficiente agua y dejar hervir por 40 minutos.



- Agregar el huevo a una olla con agua hirviendo y cocinar por 7 minutos para que quede tierno. Pasar el huevo a un recipiente con agua fría para cortar la cocción, quitar la cáscara y ponerlo dentro de una bolsa. Agregar tare hasta cubrirlo y reservar por mínimo 20 minutos.



- Colocar los trozos de panceta dentro de una bolsa y agregar tare hasta cubrirlos, cerrar y reservar por un mínimo de 20 minutos.


- Cortar los tallos de la cebolla cambray finamente y reservar.


- En un sartén con aceite de ajonjolí caliente agregar la panceta y dorar por ambos lados hasta cocinarse por completo.


- Colar el caldo de huesos y vegetales y reservar.

- En una olla calentar 250 ml de agua junto con 250 ml del caldo. Esperar a que hierva y agregar la pasta para ramen, cocinar por 3 minutos, mezclar y colar.



- Para servir: Agregar 4 cucharadas de tare en un tazón, seguido del aceite de ajonjolí y el caldo.



- Para servir: Agregar los fideos de ramen, la mitad del huevo cocido, la panceta el alga nori y por último los tallos de cebolla cambray picados. Degustar caliente.
